Nez Perce County Fair

The Nez Perce County Fair was last weekend. Grandpa Charlie and Grandma Leslie came for a short visit…..but it was perfect timing with Grandpas birthday!

River wasn’t too sure of the fair. The noises were “too loud,” and the animals in the petting zoo scared him. He’s the cautious one. But Sissy loved the whole experience. She is fearless…..thinking she will be the one who keeps me up late at night in a few years!



We convinced Riv to ride one ride, but only with me riding with him too.

And then we petted all kinds of animals in the amazing little petting zoo…..the highlight of our whole fair experience. River watched from outside the gates:).




And then after stuffing our bellies with all kinds of fair food…….we came home to pineapple upside down cake (Charlie’s favorite) to celebrate his special day!


I’m going to leave you with the recipe for this cake…….because it was THAT good, ridiculously easy, and is a keeper!


1 Box Yellow cake mix (plus the ingredients needed according to package instructions)
1 Can Pineapple Rings (save the juice)
12 Maraschino Cherries
1/4 C Butter
1 C Brown Sugar

Pre-heat oven to 350 degrees

Cut up the Butter into small chunks and evenly distribute them along the bottom of the cake pan. Top the Butter with the Brown Sugar and stick in the oven while it pre-heats. Check on it several minutes later, you want everything melted and bubbly. Remove. Then place the Pineapple rings along the bottom of the pan and place a Maraschino Cherry in the middle of each ring.

Meanwhile prepare the cake mix according to package instructions. Only instead of using water, use the leftover pineapple juice from your can of pineapple rings. Pour the batter over the Pineapple/butter/brown sugar mixture and place in the oven and bake according to the cake mix instructions. Remove when a toothpick comes out clean.

Run a butter knife along the edges of the pan to help loosen the cake. You want to let the cake set a minute but no longer than five minutes. Grab a cookie sheet or serving platter and place on top of the cake pan. Flip it over and serve! So moist!
